Winemaking
This Top Tier is only made when the vintage delivers. Hand-harvested fruit comes off select Hawke’s Bay parcels of gravel for power, silt and clay loam for texture and finesse. Whole bunch pressed and fermented in French oak barriques, guided by traditional Burgundian craft. Primary and full malolactic fermentations bring richness; ten months on gross lees builds depth and seamless integration.
The result: a Chardonnay that shows the best of Hawke’s Bay. Generous fruit, refined structure, and serious presence. Bold, balanced, unmistakably Sileni.
