"Make it with your hands and it will have soul” - unknown.

For our inspirational food contributor, Ash Scott, organic is a lifestyle. It is the choices she makes daily, to tread lightly and shop consciously and locally when I can. This philosophy is reflected in her work and design and in the gorgeous cakes and sweet treats she creates.

Ash believes that you shouldn’t cook with a wine that you wouldn’t drink, which is why this recipe contains our Cellar Selection Merlot. As she says, it is the “perfect thing to have in your glass while pottering in the kitchen.”

Chocolate and Merlot Truffles
Servings: 25
Difficulty: easy
Wine pairing recommendation: Cellar Selection Merlot

Ingredients
260g dark chocolate
120ml Cellar Selection Merlot
60ml organic cream
1 Tablespoon butter
cacao or cocoa powder for rolling

Method
Roughly chop the chocolate and place it in a heat proof bowl, set aside. Pour the cream and merlot into a saucepan, heat until boiling, allow to simmer for a few minutes and then pour it over the chocolate. Leave this mixture for a few minutes, stir until smooth and then add the butter. Once all the chocolate and butter is melted you will be left with a thick ganache. Cover and place it in the refrigerator for a few hours or until set. Take a melon baller or a teaspoon and roll out balls of the mixture, coat in cacao and store in the refrigerator. Enjoy!
